Sure. I found the recipe for Tomatoe Pie on this forum under the recipe section. I made it and have been addicted to it since early in banding. I pretty much have it every morning and love it. Alot of people laugh and joke about it as being my secret weapon to weight loss. Who knows maybe it is :)

So I've read about it and heard people swear by it. But I still have no idea what it actually is!! Anyone wanna fill me in??

It is wonderful.. My husband and I have it every morning as well. I also add spinach and mushroom. Thank you Debbie :wub:

I do an abridged version by using diced tomatoes, raw spinach, lowfat mozzerella, mushrooms and my secret ingredient..cubed tofu!! lol. (I don't do a tortilla as I find I just get 'stuck' doing any kind of bread or flour product. Even squirrely bread (no flour) gets me.)

I heat the ingredients in the microwave for 1.5 minutes and enjoy a delicious low calorie, high protein lunch or dinner..and like Debbie & Janice..I've been know to have it for breakfast as well!!

I too am a tomato pie junkie...love it for breakfast. I cut my onions up very fine, not a huge fan of their texture. It is wonderful and very addictive. Enjoy!!

TOMATO PIE (SMACK YER GRANNY!)

1 9 inch ready made pie crust

2 LARGE ripe tomatoes, sliced thin, salted, and drained

1 medium onion, sliced thin

1/2 cup shredded mozzarella cheese

1/2 cup shredded parmesan cheese

3/4 cup mayonnaise

Bake pie crust in oven for about 8-10 minutes. Remove from oven. <- IMPORTANT STEP TO BAKE PIE SHELL, DONT SKIP!

Put thinly sliced onions in bottom of pie crust

Then layer (DRAINED) sliced tomatoes over onions <- IMPORTANT TO DRAIN THE TOMATOES FIRST (To Drain: Slice and lay on paper towel)

Mix cheeses and mayo, add black pepper.

Pour cheese mixture over tomatoes, spread.

Bake pie in 350 degree oven for 25-30 minutes.
