Sweet Pepper Soup

1 med onion- chopped fine

2 TBSP canola oil

3 Sweet Peppers (1 red, 1 yel, 1 orange)- chopped fine

4 cups Vegetable broth

1 sprig Thyme

1 tsp marscapone

1 tsp minced black olives

Saute onion in oil in large saucepan, until onion is soft. Add Peppers, broth, thyme.

Bring to a boil slowly, reduce heat and simmer until peppers are soft. Blend with handheld blender

or transfer to food processor and blend well. Return to simmer before serving. Add marscapone and

olives to bowl before serving. Bon appetit
