Painter Posted May 14, 2008 Report Posted May 14, 2008 This is one of my favorite homemade soups: Pureed Carrot Soup Ingredients: 1 small vidalia onion(s) 3 Tbsp butter 12 medium carrot(s) 4 cups fat-free chicken broth 2 tsp table salt 1 tsp Ground black pepper Instructions In a large soup pot saute onion in butter until transparent. Peal and slice carrots. Add broth, salt, pepper and carrots to pot. Simmer until soft. puree in batches in a blender. It is really simple and very yummy. I estimate calories at around 150 for 1/4 of the recipe.
