C1BandedBabe Posted June 13, 2008 Report Share Posted June 13, 2008 When I was doing low carb, I use to have this as a sweet treat and it was actually really yummy if you like pumpkin.. I buy the 100% pure pumpkin made by Libby, it is really mushy and creamy. I take a couple of spoon fulls and put on a little saucer or a bowl and mix it with a pack of splenda and some cinnamon and then maybe add a little whipped cream or cream cheese in it sometimes and then pop it in the microwave for about a minute and wa-la you have a faux pumpkin pie filling... Like I said it really yummy if you like pumpkin and its low in calories and has some protein in it too.. You should try it...
