C1BandedBabe Posted June 13, 2008 Report Posted June 13, 2008 When I was doing low carb, I use to have this as a sweet treat and it was actually really yummy if you like pumpkin.. I buy the 100% pure pumpkin made by Libby, it is really mushy and creamy. I take a couple of spoon fulls and put on a little saucer or a bowl and mix it with a pack of splenda and some cinnamon and then maybe add a little whipped cream or cream cheese in it sometimes and then pop it in the microwave for about a minute and wa-la you have a faux pumpkin pie filling... Like I said it really yummy if you like pumpkin and its low in calories and has some protein in it too.. You should try it... Its something to add to the mushy stage..lol
C1BandedBabe Posted June 13, 2008 Author Report Posted June 13, 2008 I really like it.. like I said you can spice it up how ever you want it to taste I like to add nutmeg to mine too... yummmm
erin2796 Posted June 13, 2008 Report Posted June 13, 2008 I'm going to remember that after I'm banded. I LOVE Pumpkin pie!!! thanks for the great tip!
cfuture88 Posted June 15, 2008 Report Posted June 15, 2008 If you use nonfat evaporated milk, you can make real pumpkin pie filling- just without the crust- splenda if you like.
