Guest CaraMBA09 Posted August 10, 2008 Report Posted August 10, 2008 2/3 cup butter 2/3 cup flour 7 cups milk (could use soy or FF) 4 large baking potatos, baked, peeled and cubed (about 4 cups) 4 green onions sliced or chopped 12 bacon strips (OR turkey bacon) - cooked and crumbled (maybe eliminate this if our tummies dont like) 1 1/4 c shredded FF cheddar cheese 1 c. FF (8 oz.) sour cream 3/4 tsp salt 1/2 tsp pepper In large kettle or Dutch oven, melt the butter. Stir in the flour; heat and stir unitl smooth. Gradually add the milk, stirring constantly until thickened. Add potatoes and onions. Bring to a slow boil stirring constantly, immediately reduce heat and simmer for 10 minutes. Add remaining ingrediants; stir until cheese is melted. comfort food!
Guest CaraMBA09 Posted August 13, 2008 Report Posted August 13, 2008 I made this last night. I made it will real cheese, sour cream, etc. - nothing fat free I am afraid to say. Next time, I will experiment using 50% milk and 50% chicken broth to make it not so thick...I am also a salt fanatic (bad vice) and felt it taste pretty bland until I added both sea salt and a bit of garlic salt to it. Otherwise, it is QUITE tasty.
